Cold Storage for Milk and Dairy Products

Milk is an indispensable raw material for many food industries. Products such as cheese, kashar cheese, yogurt, bakery goods, cakes, chocolate, and others are produced using milk and reach the end consumer.
After milking, milk is generally processed in integrated facilities to produce various products. Dairy products have a much higher risk of spoilage compared to other products. Microorganisms present in milk and dairy products cause spoilage, decay, or mold growth when the temperature falls below a certain level. Therefore, they must be subjected to a cooling chain after production.

The first step after producing pasteurized milk, cheese, cake, chocolate, yogurt, and similar products is to keep them under cold chain conditions. Milk and dairy products are cooled between 0°C and 10°C depending on their structure and storage conditions. With cold room storage, they can be preserved for long periods.

Among milk and dairy products, cheese is the most widely consumed product. Cheese offered to consumers can be stored for a maximum of 5 to 8 days, after which spoilage and decay begin. Therefore, cold storage or maintaining the cold chain extends the sales and consumption life of cheese. Every type of cheese can be preserved for a long time between 0°C and 5°C. In short, cold storage benefits not only producers and intermediary companies economically but also provides fresh products to consumers.

For example, yogurt can be stored as follows:

  • 3-6 weeks between 0°C and 1°C

  • 1 week between 7°C and 10°C

  • 1-2 weeks between 5°C and 7°C

In cold storage, cheese shelf life varies as follows:

  • Processed cheese: 1 year at +5°C, 9 months at +15°C

  • Very hard cheeses: 9 months at +5°C, 6 months at +15°C

  • Hard cheeses: 6 months at +5°C, 3 months at +15°C

  • Semi-hard cheeses: 4 months at +5°C, 3 months at +15°C

  • Soft cheeses: 1.5 months at +5°C, 1 month at +15°C

  • Fresh cheeses (aseptically produced): 1 month at +5°C, 3 weeks at +15°C
